Pumpkin Pancakes
It's Fall and I love pumpkin everything! There is a Pumpkin Festival in Ohio every year where they make everything you can imagine out of pumpkin...I'm so excited to go!! I had some left over canned pumpkin after making pumpkin bread the other day so I got online and found this recipe...it was pretty yummy! I think next time I will add a bit more cinnamon and pack the 3 Tbsp of brown sugar. Tell me what you think or maybe somebody has a better pumpkin pancake recipe???
Ingredients:
2 cups all purpose flour
3 Tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp ground allspice
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp salt
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 Tbsp vegetable oil
2 Tbsp vinegar
Directions:
In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt. Stir into the pumpkin mixture just enough to combine.
Heat a lightly oiled griddle or frying pan over medium high heat (I had to turn it down) Pour or scoop the batter onto the griddle using approx 1/4 cup for each pancake. Brown on both sides and serve hot
**don't forget the maple syrup!!** Although I have seen recipes out there that couple it with apple cider syrup, pecans, honey pecan butter etc....
