Frosted Pumpkin Walnut Cookies
These are fabulous!!! I got this recipe from my friend Tracy and I love them! The frosting tastes just like maple bar frosting. I just thought I'd post a Thanksgiving treat on the blog. I hope everyone has a great Thanksgiving!
Ingredients
1/2 c. butter, softened
1 1/2 c. firmly packed brown sugar
2 eggs
1 c. mashed pumpkin
1/2 tsp. lemon extract
1/2 tsp. vanilla extract
2 1/2 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
2 tsp. pumpkin pie spice
1 c. chopped walnuts
Maple frosting
Maple Frosting:
1/4 cup butter, softened
2 1/4 cup powdered sugar
2 Tbsp milk
3/4 tsp maple extract
Cream butter, gradually add brown sugar; beat well. Add eggs, one at a time, beat well after each addition. Stir in pumpkin and flavoring. Combine flour, baking powder, salt and spice. Gradually add to cream mixture. Stir in walnuts. Drop by teaspoonfuls on greased cookie sheet. Bake at 375 degrees for 12 minutes. For the Frosting: Cream butter, gradually add 1 cup powdered sugar. Add remaining sugar alternately with milk. Add maple extract. Beat well.
