Healthy Wheat Bread

I FINALLY used my wheat grinder for the 1st time on Sunday! My parents got "us"-me- a wheat grinder for Christmas 2 years ago, and I'd never used it. I don't know what kind of wheat to get from the cannery, so my Mom gave me some wheat when I was in Idaho in October-yes, I hauled it in my suitcase on the plane-and finally used it! If anyone knows what kind of what I should get from the cannery please let me know, I would like to order some so I could make bread more often! The bread turned out great! It's just kinda heavy, but I hear that's how wheat bread is! But if you'd like to give it a try, it's SUPER easy and SUPER fast!!

5 Cups HOT water
1/3 Cup Olive Oil
2/3 Cup Honey
1/2 Cup Potato Flakes
1 TB Salt
2 TB High Gluten Flour
2 TB Yeast-I always use a little extra
6 Cups Whole Wheat Flour
4-6 Cups Whole Wheat Flour

In mixer Add:
HOT water
Oil
Honey
6 Cups Flour

Mix

Then Add:
Potato Flakes
Salt
High Gluten Flour
Yeast

Mix for 1 minute, turn off and let sponge for 2 minutes-mix again.

Add remaining 4-6 cups flour until the dough pulls away from the sides as you are mixing it. Remove mixing hook. Let rise 7-10 minutes, form into loaves and let rise 7-10 minutes. Bake at 350 for 28 minutes. Makes 4-5 loaves all depending on the size of your bread pans!!

**I ground about 10 cups of wheat and it was almost perfect!**

Shell- My mom said the red wheat is what she uses. Your bread looks beautiful, that is is my favorite kind of bread. It is great for snacking or along side a meal, but not the best for making sandwiches, it gets kind of crumbly.

Wow good job Shellee! Looks great! If you grind your own wheat you can't give me any gruff about making my own baby food!!! :)
