Crepes / Swedish Pancakes

My family makes these for breakfast/lunch every Christmas morning, but they are also fun for dinner.

3/4 cups flour
1 teaspoon sugar
1 cup milk (you can also use 1/2 cup buttermilk)
4 eggs.

Combine eggs and milk. Gradually add the dry ingredients, to prevent clumps. It makes a very thin batter. Heat frying pan on medium high to high heat. Pour enough batter into bottom of pan to barely cover it, you kind of have to swirl it around to make a thin circle. Bake quickly then turn.

We usually eat them with all types of fruit (strawberries, blueberries, bananas, kiwi, huckleberries) and whip cream and powdered sugar. You put all the fruit in the middle, with some whip cream and roll it up like a taco, then sprinkle with powdered sugar. The batter is kind of a sweet batter, but my mom also likes to roll them up with ham, swiss cheese, and some mustard. Both are really good! And it's fun because people can kind of pick and choose what they want to put in their crepe.
