Lemon Rice
1 cup white rice
4 green onions
1 1/2 Tbsp butter
1 1/2 cups chicken broth
1 Tbsp lemon zest
2 Tbsp lemon juice
salt and pepper
Chop white part of onion into 1/2 inch pieces. Saute in 1/2 Tbsp butter in bottom of medium saucepn over low heat for 5 minutes. Add rice and raise heat to medium. Stir often for 3 minutes. Add broth, bring to biol then cover and simmer for 15 minutes over low heat. Halfway through cooking add lemon zest, lemon juice, salt and pepper and 2 Tbsp of remaining chopped onion (don't use all of the onions). Stir in remaining butter and serve hot.
