Truffles

These are the best truffles I have ever had! We made dozens of them for my brother's wedding.

1 package mint oreo cookies (you can use regular oreos too but I think mint is the best!)
2/3 of 1 box of cream cheese (softened) (if you use regular oreos use the whole box of cream cheese, there are more in a reg. package than mint)
melting chocolates (I didn't like the Wilton brand kind. They were too hard to melt. I just bought them in bulk at WinCo. I'm not sure where else you can find them...)

Grind the oreos in a grinder (you can crush them in a ziplock if you don't have a grinder) and put them in a bowl.
Mix in the cream cheese until you have sticky crumbs.
Use a melon baller or a cookie dropper (with the little lever thingy on the side) to make balls of the dough and place on a wax paper covered cookie sheet.
Melt chocolates in a microwave bowl, 30 seconds at time.
Drop truffles into melted chocolate one at a time. Scoop them out with a fork and tap off the extra chocolate.
Let truffles cool on tray.
These will stay yummy for a long time. You can keep them refrigerated or freeze them in a container for an "I just folded the laundry" reward!Makes about 25 mint and 40 reg.

I spent all morning making these for the chili/chocolate cookoff and they are sooooooo yummy!! Infact I'm a little afraid that I won't have enough by tomorrow...I'm going to have to hide them from Jeremy. I'll let you know if I win a prize! Thanks Meg!
