"Don't have to think about it Two week menu"

Ok, girls I know this is long but I felt that it needed to be all in the same post. My sister just sent this to me. It is great for a no brainer shopping trip. This is a two week menu along with a grocery list and recipes for each meal! I wish my menu was this organized.

Week 1
Monday Manicotti & Salad (split salad & dressing, save for tomorrow)
Tuesday Parmesan chicken & Bruschetta w/ leftover salad

4 cups Mozzarella cheese
3 cups sour cream
6 slices Swiss cheese
1 cup cheddar cheese
8 oz. cream cheese
1cup whipping cream

CANS
1 can green beans
3 cans corn
1 can mandarin oranges
1 can tomato soup
8oz. tomato sauce
28oz. stewed tomatoes
16oz can kidney beans
5 cans cream of chicken soup


PRODUCE
6-8 Roma tomatoes
3 medium onions
5# red potatoes
4c. Romaine
4c. Spinach
Garlic
1 cup celery
3 green onions

MEAT
12 whole breast boneless skinless chicken breast
3 lb. ground beef
1 cup cubed ham (farmland brand)

Pasta
1 pkg. Jumbo Shells
1pkg. penne pasta
1 pkg. fettuccini noodles
2 jars of Prego Marinara

Bread
2 dozen Rhodes Rolls
1 loaf Baguette Bread
1 loaf French bread


MISC.
1 bag Tortilla chips
1 box Ritz Crackers
½ cup dried cranberries
½ cup slivered almonds
Corn bread mix

(no recipe items: bananas, milk, yogurt, dried apricots, cereal, oj)

Monday Shopping list for week 2

1 bag Hoagie Rolls
1lb. Deli Shredded Roast Beef
Green Salad Bag
Tomato

PANTRY ITEMS
Italian seasoning
Basil
Oregano
Parsley
Olive oil
Vegetable oil
Cider vinegar
Worcestershire sauce
Garlic powder
Onion powder
Poppy seeds
Dried onions
1c. Quick oats
Canadian steak seasoning
Rice
Butter
Milk
2 eggs
Foil
Pam (nonstick cooking spray)
Sugar
Milk


Manicotti in Jumbo Shells

Boil: ½ pkg. Jumbo Shells 12min~drain
Mix: 15oz. Ricotta cheese
½ c. shredded Parmesan cheese
1 ¾ c. shredded mozzarella cheese
1 beaten egg
1 ½ tsp. parsley

Spray 9x13 pan with Pam
Pour ¾ jar of Prego in bottom of pan
Fill shells with cheese mixture & place on top of sauce. Pour remaining ¼ jar of sauce over shells. Sprinkle with ¼ c. shredded mozzarella cheese and ¼ cup shredded Parmesan cheese.
Cover with foil. Bake 45 min @ 350 degrees. Uncover & bake 5 min. Let stand 5 min. before serving.

PARMESAN CHICKEN

½ c. grated Parmesan cheese
½ tsp. garlic powder
1 envelope Good seasons Italian mix

Moisten 6 boneless chicken breasts & coat with mixture. Bake in shallow dish
@400 for 25 min.

Crusty Italian Bruschetta
1loaf baguette bread
cut bread into diagonal slices.
Brush tops with olive oil.
Bake @ 450 degrees for 5 min. until the edges are golden brown.
Remove from oven.

Mix ingredients with ½ c. olive oil.
Spoon mixture on top of baked bread.
Serve immediately.

6-8 Roma tomatoes
2 garlic cloves, minced
1 tsp. dried oregano
1 tsp. dried basil
2 tsp. salt
olive oil

Penne Italian Pasta
1 lb ground beef
1 med. Onion chopped
1 pkg. Penne Pasta
1 jar Prego
2 c. mozzarella, shredded
2 T. Italian seasoning
Brown ground beef with chopped onion, drain. While meat is cooking, boil pasta according to package, drain. Mix together with 1 jar Prego and one cup cheese. Put in 9x13 pan and sprinkle remaining cheese.
Bake @ 350 until cheese is melted.

Lion House Taco Soup
In Pot, brown 1 lb. ground beef with 1 medium chopped onion. After browned, add 1 pkg. taco seasoning, 1 can (16 oz, drained) corn, 1 (16oz.) can kidney beans, 28 oz. stewed tomatoes, 8 oz. tomato sauce. Simmer 20 min. In individual bowls, top with grated cheddar cheese and tortilla chips.

Poppy Seed Chicken Casserole

4 chicken breast halved, cooked, and shredded
1 can cream o chicken soup
2 cups sour cream
60 Ritz crackers crushed
1 Tbsp poppy seeds
5 Tbsp melted butter
Hot cooked rice

Place chicken in pan, mix soup & sour cream, and pour over chicken. Mix crackers, poppy seeds & butter. Sprinkle on top. Bake uncovered @ 350 for 20-30 min. Serve over rice.

Mandarin Green Salad
4c. torn Romaine lettuce 4c. spinach leaves
½ c. dried cranberries 1c. chopped celery
1 can mandarin oranges, drained
3 green onions, sliced Toss in large bowl

Combine in small pan:
4 tsp. sugar ½ c. slivered almonds cook over low heat, stirring constantly, until sugar is melted & almonds are coated and browned. Cool, break apart. Sprinkle on Salad.
Poppy seed dressing
¾ c. sugar ½ tsp. salt 1TBSP dry mustard
2 dashes onion powder 1/3 c. cider vinegar
1c. veg. oil 1 TBSP poppy seeds
Deli French Dips
Hoagie Rolls
1lb.-shredded deli Roast Beef
Sliced Swiss cheese
Au jus sauce

Butter sliced and opened Rolls, Broil till golden
Warm beef in Microwave or stovetop
Prepare Au jus sauce according to pkg.
Top rolls with shredded meet and Swiss cheese.
Broil again until cheese is melted.
Slice diagonally and dip in sauce.
(optional, sauté onions, add after broiled)

Canadian Steak petite potatoes
Wash, and cut into bite size pieces. (leave skin on)
Toss with olive oil and sprinkle with Canadian steak seasoning. Spread on jelly roll pan. Bake 40 mins. @ 400 degrees, or until golden brown and wrinkled.

Ham & Corn Chowder
1 chopped onion pat of butter 1tsp. salt
4c. potatoes, cubed 2 cans cream of chicken soup
1c. sour cream 1c. chopped ham (cubed)
1 can corn, drained 2c. milk dash pepper
2 T dried parsley
Boil potatoes, covered in water for 8 minutes. Meanwhile, sauté the chopped onion in a little butter until it becomes translucent.
Mix the potatoes with the sautéed onion and add the remaining ingredients. Leave the chowder simmering until you’re ready to serve it.

Meatloaf
Combine and put in greased loaf pan.
1lb. ground beef
1 egg
½ -1cup quick oats
1 T. Worcestershire sauce
2 T. dried onion
1 tsp. salt
½ tsp. pepper
1 can tomato soup
Bake covered with foil 45 min, uncover and bake 15min @ 350 degrees

Alfredo Sauce
½ c. real butter 1c. whipping cream
¾ c. grated parmesan cheese 1T garlic
salt & pepper
Slowly bring to boil-stir frequently
Simmer 5 min. until thickened
Boil Fettuccini, drain and toss with sauce.

Creamy Crock-pot Chicken
Spray crock-pot with Pam
Place 8 halves or 4 whole boneless skinless chicken breast in the bottom of crock-pot (frozen or thawed)

Mix in bowl and pour over chicken:
1 pkg. Good Seasons Italian dressing mix
8oz. cream cheese
1 can cream of chicken soup

Cook low 6-8 hours
High 3-4 hours
Serve over Rice

I check your blog every so often when I need some ideas. Just wondered if any of you have heard of the Home Cookin' software. I just got it for Christmas and LOVE it! I am entering all my recipies, then I can print menus, and even a shopping list for the recipies I plan to make for the week/month/whatever. It's amazing! They have a free trial too, if you want to try it out.... I love all your recipe ideas!
