Foil Dinners

I do these different than most people. Mainly because I like food that looks pretty.
This recipe is for one foil dinner, so just multiply it for each person.

1 chicken breast (plain or pre-seasoned)
1 carrot sliced into sticks
1-2 red potatoes, sliced
olive oil
garlic salt
pepper
Foil

Take one sheet of foil about 18 in. long, brush olive oil in the middle section. Place one layer of potatoes and one layer of carrots on oiled section. Season vegetables, place chicken breast on veggies, season if needed. Repeat one layer each potatoes and carrots. Fold foil into a pouch.

Add and extra layer of foil if your are cooking over hot coals when camping. Also you can put the chicken in frozen if you are going to prepare them to take camping.

Cook in the oven on 400* for 30-40 minutes Turn half way through.
Cooking time is about the same when cooking over hot coals.
You can also cook these on a grill, for those days that you don't want o turn the oven on and heat up the house.
