Cranberry Cake
This is a HUGE hit at my house during the holidays. I love it because the cake part is so sweet, and the cranberries are a bit tart, so it's the perfect combination!
3 eggs
2 cups sugar
3/4 cups margarine, softened
1 teaspoon almond extract
2 cups flour
2 1/2 cups fresh cranberries
1. Beat eggs and sugar together
2. Add margarine and almond extract, mix for 2 minutes.
3. Add flour
4. Mix in cranberries (I think one bag of cranberries is more than 2 1/2 cups, but I always use the whole bag)
The batter is going to be very thick.
Pour into a greased 9x13 pan, bake at 350 degrees for 45-50 minutes.
I haven't made this yet this year, but I am SO excited to make it soon! It's also really good in the summer, but you can't find cranberries in the summer, so if you like it you will have to stock up during the holidays and put them in your freezer!
